- 2 tablespoons of olive oil
- 1 small yellow onion (small cube)
- 2 tablespoons coriander (ground)
- 2 teaspoons cumin (powder)
- 2 teaspoons of chili powder
- 1/2 teaspoon garlic (chopped)
- 1 1/2 teaspoons kosher salt
- Arrowroot Powder (for rolling potato dumplings)
- Avocado oil (for sprinkling potato flour)
- Potatoes
- 4 red potatoes (sliced medium)
- 2 quarts of butter
- 1/2 cup cream
- 1 1/2 teaspoons kosher salt
- Arrowroot Powder (for rolling potato dumplings)

- 4 red potatoes (sliced medium)

- Kosher salt and freshly ground black pepper (to taste)
- Avocado sauce
- 1 large avocado (roasted)
- 3/4 cup of sour cream
- 1/2 cup salsa verde
Instructions for making Papa Relenas with Wagyu Beef (Mashed Potatoes).
- To prepare the avocado sauce, mash a large ripe avocado (after peeling and removing the stone). Mix the mashed avocado, sour cream and salsa verde in a bowl. Refrigerate until ready to serve. Note: This can be done 2 days before. Cover and refrigerate until ready to use
- Preparation of potatoes Cut the potatoes into medium cubes. Place the sliced potatoes in a large pot and cover the potatoes with cold water. Add 2 tablespoons of kosher salt to the water. Bring to a boil over high heat, then reduce heat to medium. Cook the potatoes for 15-20 minutes until soft.
- Wagyu Broad Blood Rat Preparation While the potatoes are cooking, heat a medium skillet with 2 tablespoons of olive oil. After heating all the minced beef blood, cut it into small pieces. While the meat is cooking, cut it into small pieces with a wooden spoon. Cook the meat for 3 minutes and add the chopped yellow onion. Cook for another 3 minutes. Add the coriander leaves, ground cumin, chili powder, kosher salt and minced garlic.
- Finish the potatoes. Toss the potatoes with the butter, heavy cream and 1 1/2 teaspoons salt. Season with more salt and/or freshly ground black pepper as needed. Allow the potatoes to cool slightly. Next, add the arrowroot powder and the eggs to the potatoes.
- PREPARE THE RELLENNA Preheat the oven to 375°F. Take a large 1/4 cup potato and make a flat patty with your hands. Then add 1 1/2 tablespoons of whole blood wagyu beef to the center of the hash browns. Carefully form the potato dough around the beef. Roll the dusted potatoes under the bow and arrange on a plate. Wash your hands between each ball. Repeat the above process until all the potatoes are used. Freeze the potato balls for 15 minutes.
- Remove the potato balls from the refrigerator and bake them in cakes or muffins. Fill the cake with potato balls. Pour the sweet potato with avocado oil.
- The last step is to bake the potato patties (in cupcakes) at 375 degrees Fahrenheit for 40 minutes. Remove from oven and gently turn each potato ball. After wrapping, you may need to slide it into the cake pan. They may not come all the way and may pop a little, but press them firmly into the cake pan. Bake another 15 minutes.
- Remove from the oven and let the filling cool for 10 minutes. Carefully run a knife along the edge to remove it from the cake pan. Serve with avocado sauce and enjoy!
As your experience and confidence grow, you can regularly modify and adapt recipes to suit your personal preferences. If you want more or less ingredients, or if you want a recipe that tastes more or less spicy, you can make simple adjustments to achieve this goal. In other words, over time you will start to create personal recipes.
