- 6 ounces unsalted butter (melted)
- 3 cloves of garlic (chopped)
- 3 sprigs fresh thyme leaves (take leaves from one sprig, leave all)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 4 ounces Parmesan cheese (grated)
- 4 tablespoons green onion (chopped)

- PREPARING THE MARINADE FOR IRON HEAD BILLETS In a bowl, combine minced garlic, extra virgin olive oil, balsamic vinegar, red wine, chopped rosemary, kosher salt and freshly ground black pepper. Then continue to cook the potatoes until soft (about another 30 minutes).
- Sprinkle with thyme and parmesan and cook the potatoes for another 5 minutes. Cook potatoes with chopped green onions on top.
- LAST STEP Place the Fullblood Wagyu steak on the preheated grill and set the marinade aside. Cook the steak for 5 minutes on each side. Remove the steak from the grill and let it rest for 10 minutes. Meanwhile, pour the reserved marinade into a pan over medium heat. Bring the marinade to a boil and cook until reduced by half (this will take about 10 minutes). Watch carefully so the marinade doesn't burn.
- Pour the marinade/sauce onto a plate. Slice the steak against the grain into 1/4-inch-thick slices and place on top of the sauce. Pair the steak with Yukon Hassleback Gold Potatoes and enjoy!
