- 2-3 tablespoons of melted bacon fat
- Avocado sauce
- 2 medium avocados (ripe, peeled, cored, coarsely chopped)
- 1/4 fresh coriander (coarsely chopped)
- 1/4 cup sweet onion (coarsely chopped)
- 2-3 serrano bell peppers (chopped with seeds)
- 1/3 cup water
- 1 lemon (juice)
- Halal salt and freshly ground black pepper (to taste)

- Make the avocado salsa: Combine all the ingredients for the "avocado sauce" in a food processor and puree, rubbing the sides of the blender. Transfer the sauce to a small bowl. Season to taste with kosher salt and freshly ground black pepper. Cover and refrigerate (this sauce can be made overnight).
- Making the pancakes First, cut the pancakes into slices and fry them. Then place the strainer over the pan. Sprinkle the zucchini with kosher salt and leave for at least 45 minutes. The longer it sits, the more water comes out.
- After 45 minutes, squeeze out the remaining water with a clean, dry towel. Drain as much water as possible. This step is very important, because the more moisture in the zucchini, the less likely it is that the zucchini will stick together while frying.
- While the zucchini is cooking, fry the Wagyu beef in a large skillet until crispy. Then drain the bacon fat into a bowl. Reserve bacon grease for frying pancakes. Finely chop the fried bacon and set aside. Combine zucchini, grated sweet potato, cooked bacon, coconut flour, arrowroot, egg, garlic powder, and freshly ground black pepper in a large bowl. Divide the mixture into golf ball-sized portions and place on a parchment-lined baking sheet.
- Press the ball firmly and roll it into a 1/2 inch thick loaf. Freeze pancakes for 30 minutes. Heat a large skillet over medium heat, add 1-2 tablespoons of bacon fat (enough to slightly cover the bottom of the pan).
- The final step is to put the pancakes in a large hot skillet and fry them. When the first side turns brown, which will take about 2-3 minutes, carefully turn the pancakes over with a large spoon. Fry the pancakes on the other side for 2-3 minutes until golden brown, reducing the heat if necessary. Carefully transfer the bread to a wire rack while the extra portion is cooked (add more bacon fat to the bottom of the pan if necessary).
- Be sure to adjust the temperature between batches (if necessary) to prevent the fry from burning. Serve wagyu wholeblood with bacon, zucchini and fries served hot with creamy Avako Doe sauce (prepared). Enjoy!
