- Add 1 cup water and 1 tablespoon oil to make a thick, runny paste. The amount of water needed will depend on the quality of the flour, so start with one cup and add as needed. Mix well.
- Using an electric whisk, mix until you get a smooth, thick dough without lumps.
- Then boil 2-2.5 cups of water in a double boiler or pressure cooker. The amount of water depends on the size of the steamer or pressure cooker.
- Then add 2 teaspoons of Eno or fruit salt. Two teaspoons of Ino will make the elderberry plump and fluffy.
- Vigorously and quickly enter en into the dough. En makes the mixture frothy, so stir it quickly.
- Pour the prepared mixture into an oiled bowl.

- Place the pot in an electric rice cooker, steamer, or pressure cooker. The water should already be boiling or hot when you add the elderberry paste to the pot. When using a pressure cooker, remove the weighing/ventilation whistle from the lid and cover the pressure cooker tightly with the lid.
- Steam the rice in an electric pot for 15-20 minutes. If you are using a skillet, pressure cooker, or instant pot, cook over medium heat for 12-15 minutes. In the photo below, elderberries are boiled in an electric pot for 17 minutes to cook rice.
- Insert a toothpick to check doneness. It should come out clean when the raw footage is ready. If there is paste in the toothpick, it needs to be steamed for a few more minutes.
- Reheat the elderberry or let it cool completely. Gently run a butter knife around the edges to separate the elderberry from the pan. Place a plate or baking sheet in the pan.
- Then quickly turn the pan over. With good lubrication, phyllo slides easily over the board.
- Using a sharp knife, cut the fennel into squares and set aside until soft. Since I used a concave plate, I put the elderberry in the middle. This will not happen if you are using a flat plate.
- Tempering is necessary to flavor the elderberries and add moisture to the flour dough. To prepare for the temperature, first heat 2 tablespoons of oil in a small skillet on the stove. Use peanut butter or another unscented oil.
- Add 1 teaspoon of mustard seeds and let steep. When the mustard seeds are crispy, add 10-12 curry leaves, 1 teaspoon cumin, and 1 teaspoon chopped green chili to taste.
