Ingredients and spices to prepare for cooking samosas:
- Vir Chole
- Soak 2 cups of dried chickpeas overnight
- 2 black tea bags
- 5-6 whole green cardamom
- 4-5 beans with black pepper
- 2 bay leaves
- 2 cinnamon sticks (1 inch)
- 4-5 glasses of water

- 1 tablespoon of oil
- 3/4 cup finely chopped or grated onion with 2 small onions
- 2 teaspoons ginger-garlic paste
- 2.5 cups tomato puree, with 4 medium tomatoes
- 3 teaspoons pit masala
- 1/2 teaspoon red chili powder or to taste
- 1/2 teaspoon paprika powder
- 3/4 teaspoon ground cumin
- To temper Chole
- 1 tablespoon butter
- 1 inch ginger, julienned
- 1/4 teaspoon mountain masala
- 1/2 tablespoon of chopped mint cash
- 2 tablespoons chopped coriander leaves

Steps to chat with Samosa
- Soak dried chickpeas in 4 cups of water overnight. Drain the water in the morning and then rinse the chickpeas.
- Transfer the chickpeas to a pressure cooker then add all the spices: green cardamom, black pepper, bay leaf and cinnamon stick.
- Also add black tea bags, water (about 4-5 cups), and salt. Note: tea bags are used to add a dark color to the room. They do not add flavor to the final product.
- Cook over high heat 2 whistles. Then reduce the heat to medium and let the chickpeas cook for another 10-12 minutes. Remove stove from heat and let pressure escape naturally.
- You should be able to squeeze the chickpeas easily with your fingers once they are cooked. Set aside.
- If using an Instant Pot, cook for 30 minutes on high pressure using natural pressure.
- Start cooking the masala. Heat the oil in a skillet over medium heat. Once the oil is hot, add the grated/chopped onions.
- Cook the onions until the raw smell is completely gone, about 5-6 minutes. Then add the ginger-garlic paste and cook for 1 minute.
- Add the tomato puree and stir. Cover and simmer the tomatoes for 15 minutes over medium heat, stirring once or twice. This step is important, so don't rush to cook the tomatoes.
- Once the tomatoes are cooked, add the garam masala, red chili powder, paprika powder, cumin powder and more salt. Stir and cook the spices for 1 minute.
- Add the cooked chickpeas to the skillet and stir. Cover and simmer the crust for about 30 minutes over medium-low heat. Again, take your time to get the best chole flavor. Curry thickens a lot and that's what we wanted to talk about.
- The curry is ready. Check the taste and adjust the salt, etc. In this stage. Let it boil while you stir.
- To harden, heat the melted butter in a saucepan over medium heat. Once the ghee is hot, add the ginger and fry until golden brown. Fried julienne transferred to the crust.
- Add the mountains of masala and stir. Finally add the grated cashmere.
- Once the forehead is ready, gather all the other ingredients and start cooking the samosas.
- To serve the samasa chat To make a dish of samasa chat, place 1 cup of cooked grain in a bowl. Sprinkle with yogurt pieces.
- Then break up 2 large samosas and place them on top of the yogurt. Garnish samsa on forehead, coriander chutney, sweet and sour chutney.
- And lastly, garnish the Samosa Chaat with chopped onions, satays, coriander, pomegranate (if any). Sprinkle with masala tea and serve immediately.
