- 1 Double Pack 8 Original Company Beef Wagyu Beef Chorizo
- 2 1/2 cups Yukon gold potatoes (diced)
- 3 dried guajillo peppers (seeds removed)
- 2 tablespoons grape seed oil
- 3 garlic cloves
- 8 black peppercorns
- 1/2 teaspoon Mexican oregano
- 1 12 cups chopped lettuce
- 1/4 cup roasted cotija
- 2 tablespoons sour cream or Mexican cream
- hot water (for soaking hot peppers)
- Salt and black pepper (to taste)
- 2 lemons, sliced
- TELIRA ORIA
- 2 tablespoons of instant yeast
- 1 1/2 cups water (at 80 degrees)
- 1 tablespoon honey
- 1 1/2 tablespoons soft butter
- 2 tablespoons of salt
- 4 tablespoons all-purpose flour
- 1 egg (scrambled)
- 1 tablespoon water (room temperature)
Steps to prepare the Bambazzo Mexicano Potato Sandwich and Wagyu Chorizo
- Prepare the Tellera Rolls Mix the instant yeast and all-purpose flour in a bowl. Then add 80 degrees of water, honey, fine oil and salt. Mix until a smooth paste is formed. Knead the dough in a mixer on medium speed for 6-8 minutes. Cover the bowl with plastic wrap and let it rise for an hour, until doubled in size. After the dough has puffed up, press it down. Then divide the dough into 3.5 ounce portions, roll them into balls and cover.
- Let the dough balls rest for 5 minutes before rolling the dough pieces into ball-shaped rolls (reach the dough to the edges of each roll). The roll should be 5 inches long and 2 inches wide in the middle. Place the rolls on a baking sheet lined with parchment and cover with greased plastic wrap. Let the rolls rise while the oven is running and preheat to 400°F. Use one beaten egg and one tablespoon of water to make a washed egg.
- When the rolls have almost doubled in size, brush the surface and sides with the egg. Using a serrated knife, make two parallel cuts at the mark. Bake at 400°F for 20-22 minutes until the rolls are golden. Centers should read 190 degrees Fahrenheit on a thermometer. Remove the rolls from the oven and let them cool completely.
- PAMBAZO MEXICAN WAGYU CHORIZO AND POTATO BREAD Prepare Put the potato slices in a small bowl and cover with the grape seeds. Flavor with salt and freshly ground pepper. Spread the potatoes evenly on a baking sheet and bake at 400 F until cooked through (about 20 minutes). Put the guajillo peppers in a bowl and cover with hot water to soften (while the potatoes are cooking).
- While the peppers are softening, cook the whole-blooded wagyu chorizo. Legatesd, in a skillet over medium-high heat. Use a wooden spoon to break up and break up large pieces of chorizo. - The last step is to brush the bread (toasted rolls) with sour cream to assemble the wagyu chorizo potato and the authentic Mexicano bambazo. Put some mashed potatoes and chorizo on each piece of toast. Top with chopped lettuce, more sour cream and. Serve the cheese with warm guajillo sauce and a few slices of lemon.
