- To make fresh spice powder, take all the spices (bay leaf, black cardamom, cloves, peppercorns, cinnamon) into a small saucepan and sauté over low heat for 2 minutes or until fragrant.
- Remove on a plate and let cool. Then grind to a fine powder with a spice grinder.
- Now chop the onion, tomato, ginger, garlic and green chilli.
- Then use a blender to get a smooth puree.
- Heat the oil in a pressure cooker over medium heat. When cooked, add the cumin seeds and sizzle a little.
- Then add the prepared onion and tomato puree and a pinch of salt. To boil. It will spray a lot so that you can partially cover it. This will avoid clutter around the stove. Cook until the masala becomes a thick paste and the oil starts flowing out of the masala.
- Then add the remaining salt, turmeric powder, red pepper powder, coriander powder, anardine powder, and the previously prepared seasoning powder. Mix well and cook for a while.
- Then add the soaked bath and water, cover the pan with a lid. Cook over medium heat for 20-25 minutes. (If using the Instant Pot, cook by hand for 20 minutes.) Let the pressure drop by itself, then open the lid.
- Now add the amchur powder and mix well. Finally, decorate with chopped cilantro and serve.
