Prepare the ingredients and spices needed to make a mini samsa:
- For stuffing
- 5-6 boiled leaves
- 3-5 teaspoons boiled or frozen peas
- Half an inch of ginger
- 1/2 teaspoon coriander seeds
- 50 grams of panna cotta
- 1/4 teaspoon dried ginger powder
- 1/2 teaspoon dried mango powder
- Salt to taste
- 1/2 teaspoon red pepper powder
- 1/4 raw bell pepper
- 1/4 teaspoon hinge
- 1/4 teaspoon hot spices
- For flour
- 2 cups flour
- 1 teaspoon caramel seeds
- 3 (5 tablespoons) butter
- About 5-6 tablespoons of water
- 1/4 teaspoon salt
Instructions for making mini samsa
- For the flour: Pour the flour into a bowl and rub with oil until it takes shape. Add caramel seeds, salt and water. Cover with a piece of moss and let rest for 30-40 minutes.
- Boil the potatoes until soft. When using a pressure cooker in the oven or instant pan, blow 8-9 flutes on high heat with 1 glass of water at the bottom of the pot for 12 minutes on a natural pressure stand.
- Put a teaspoon of oil in a pan and fry with peas, coriander, green pepper and ginger, wait for the ginger aroma to go away.
- Add boiled potatoes and all spices and mix well. When tight, add the panna cotta and then it starts to break. You can't add bread crumbs. This

- Flatten and fry the samosas: knead as quickly as the rest of the flour. Then divide the flour into 7 equal parts.

- Roll the dough ball into a round oval shape about 6-7 inches in diameter and then cut it in half.
- Take a piece and apply a little water to the flat edge / side.
- Now connect the two ends of the ruler and pinch to form a cone. Smooth the edges to get the perfect cone shape.

- Fill the samosa with mashed potatoes, about 1-2 tbsp. Do not digest samosa. If it is soft, you can add a little cheese, but make sure it is dry.
- Now re-apply the water around the perimeter of the cone, as it needs to be sealed. To make a plate, pinch the opposite side (against where you pressed the cone) (see step-by-step picture above). Then squeeze the edges and close the samosa.
- Your samsa is ready. Repeat the same process with the remaining flour. When filling the stuffed samosas, always cover with a damp cloth and fill the rest.
- Now heat the oil in a pan over low heat. Pour a small piece of flour into the butter to check if it is ready. It will take a few seconds to appear. This means that the oil is ready. Leave the samosas formed in the oil.
- Fry over low heat. After about 10-12 minutes, the samsa will harden and turn a light brown color. At this time, raise the heat to medium heat and cook until golden brown.
- Do not cook too much in the pan, cook 4-5 samsas. And each batch will take 20 minutes, because we will fry on low heat, so be patient

- After cooking, reduce the heat again and wait for the oil temperature to drop, then add the second batch.

In addition, as you increase your experience and confidence, you will find that you can improve yourself more often and adapt recipes to your personal preferences. If you like more or less ingredients, or want to create a recipe that will have a little more or less spicy taste that can be easily changed along the way to achieve this result.
